La Bottega del Carmine was born from a legend which narrated how in the garden that opens at the back of the restaurant, vegetables and spices were grown in ancient times and then used in the nearby Convent of Carmine for the preparation of the best traditional dishes for the banquets offered in honor of foreign dignitaries visiting our beautiful city.

Since 2018, Michele Parrinello has decided to take up the thread of that ancient discourse to link it to current events and the future of Sicilian and international gastronomy.

But also to a vision, corroborated, starting from November 2023, by the expert hands of Chef Angelo Genna, who arrives here after years spent traveling the length and breadth of Italy and Europe in search of inspiration and refinement from deep into his creations.
